Meal Planning

Hi everyone!  We've been pretty busy lately, but I will update soon about what's been going on.  My part-time retail job is kicking my butt with the long hours, and Heath has been working really hard on his new adventure.  I can't wait to tell you all about it.

In the mean time, I still try to keep us on track with our meals to help with our nutrition as well as our pocket books!  Here are some recipes I want to share and some adjustments I made to each. 

Baked "Potato" Soup 
-I substituted nonfat Greek yogurt and turkey bacon for the sour cream and regular bacon. 
-You can't taste the cauliflower at all!  I used the hand blender, which I got a little too friendly with.  I suggest leaving a little bit of texture so it doesn't come out too smooth. 
-Heath loved it, and next time I'm going to try it with only one potato and possibly another time with no potatoes at all! 



Spicy Baked Hashbrown Casserole 
-Heath is a big fan of breakfast so I try to incorporate new things.  I froze breakfast burritos for him so he didn't have to cook every morning before he left for his morning workouts.  He's really enjoyed those. 
-I wanted to try something different with hashbrowns.  This recipe has no "health" factor to it at all - just great on the tastebuds!
-I cooked turkey bacon and crumbled it to add with the cheese. 




Jalapeño Sweet Potato Chicken Chili
Recipe

-I've been wanting to start cooking with sweet potato for awhile so this was the perfect dish. 
-Because it was my first time, I followed the recipe to the T. 
-I will let you know how it goes!  I'm about to put everything in the pot to sit and simmer. 



*Update: AMAZING!!! Little to no spice yet the flavors come from all the sweet potatoes. I can't wait to have this for dinner. 



Black Bean Tostadas 
-I added ground beef and some spices to the tostadas so we could have some meat with our lunch. 
-The black beans get really sticky so you'll have to work with your blender and spoon every few minutes.  Don't add too much olive oil because it'll change the taste!  I used water mostly.  I also added some lime for extra flavor.
-I already made a batch of homemade salsa the night before so we opted out of the cilantro sauce.  I'm sure it tastes really good though!  We will try it next time.  YUM.



Hope everyone had a good weekend.  We will be spending Christmas Day with my family, then traveling to Oklahoma to spend Christmas with the rest of our family.  My best friend, Da-Nell aka Nelly, is riding back with us from Oklahoma.  She's spending New Years with me so I'm really excited to get five whole days with her!  One of my other best friends, Lauren, is also coming in town for New Years so it'll be a girls week!  I think Heath may be going to Oklahoma, but he's not sure yet.  Most of his teammates will be in town for the holiday as well.

They think about him as this sweet little baby Jesus in a manger and they sing about it and they talk about him whenever they feel like it but they don't really worship him. People compartmentalize Jesus at Christmas more than any other time of the year. They love Christmas Jesus. People love him. They love away in the manger Jesus. They love silent night Jesus. But actually following Jesus, crucifixion Jesus, raised from the tomb Jesus... No thanks. But we get to remind people that Jesus is the Alpha and the Omega, the King of Kings and The Lord of lords, He is the Messiah who saves people from their sins. He isn't safe but He is REALLY good."
